Ingredients

Filling

  • 1/2 kilo pork mince
  • 300g fresh blue prawns
  • 15g dried red shrimp (expected size of each shrimp is ~10mm)
  • 4 green onions
  • Handful of dried shittake mushrooms
  • 2 packets of wonton wrappers (egg, pastry, 120 squares total)
  • 1T coriander leaves (?)

Seasoning

  • 1/2t salt
  • 2t white pepper
  • 1T oyster sauce (Lee Kum Kee brand)
  • 1T light soy sauce
  • 1t sesame oil
  • 2T cornflour

Broth

  • 1kg pork bones
  • 1 spring onion, finely chopped

Procedure

Prepare mushrooms

  1. Soak the mushrooms for 4 hours

Prepare broth

  1. Pork bones in half a tureen of water
  2. Add the chopped onion
  3. Boil for 1 hour

Main

Not recorded. Presumably:

  1. Mix filling ingredients together (dry-ish)
  2. Combine seasoning ingredients (wet)
  3. Add seasoning to filling, mixing well, ensuring the filling is evenly moist with the seasoning
  4. Fill your wonton wrappers, each with a piece of prawn and a little of the mince-mixture
  5. Boil wontons (about 8-12min per batch?)
    • You could add cabbage or something to the broth here
  6. Eat the delicious wontons, served shallow-floating in some broth and whatever inoffensive greens you added in the previous step
    • Great with a little chilli sauce, soy, etc.
