Chinese buns
This makes a few batches, some sweet and some savoury.
Recipe is vague and apparently incomplete.
Preliminary
- Soak and boil 500g beans (eg. corn?)
- Mash
- Strain, into wok
- Heat to remove water after the straining
- Add 1 cup sugar to a well in centre of bean-mash
- Allow to melt, mixing through
- Brown 1 cup of sesame seeds in a dry pan
- Add 100g crushed peanuts
- Add browned sesame seeds
- Cook, mixing, until dryish
Dish 1
- Finely chopped mushrooms (how much?)
- 2 big cans of water chestnuts
Dish 2
- 600g chopped pork
- 1/2 tsp salt
- 1 tsp light soy sauce
- 1 tsp dark soy sauce
- 1 tsp oyster sauce
- 1 tsp sesame oil
- 2 tsp (heaped) cornflour
- Mix well
Dish 3
- 1/2 tsp salt
- 1 Tbl dark soy sauce
- 1 Tbl light soy sauce
- 1 Tbl oyster sauce
- sesame (?)
- pepper (?)
- 2 tsp (heaped) cornflour
- 2 Tbl water
Compile
- Mix (Dish 3) well
- Chop 8 spring onions
- Mix (Dish 2) with hands
- Heat wok
- Add liberal dash of oil and handful of spring onion
- Add (Dish 2)
- Stir so all the meat is browning evenly
- Cooking nicely, add (Dish 1) to wok. Mix.
- Add a pinch of salt
- Add one chopped green onion, cook a little
- Add spring onion
